Ethernet card will work great. Got two in my two Q605 servers (well, okay, 
one is a LC475. Same thing).

As for the printer port, it should work for serial-based communications, 
but localtalk isn't supported over it. You can do Appletalk over Ethernet 
fine though, with the netatalk library.

One tip, sometimes I have to actually bring up a browser or something and 
use the ethernet card in MacOS before booting to Linux to make it work. Not 
entirely sure why although it's related to the way the card must be 
initialized in MacOS before it works in Linux. YMMV. Linux itself works 
great though, especially with the 33mhz clock chipping. If you plan on 
using X, I hope you have lots of patience though ;)
