Sadly the links weren't updated after the last time apple changed its tree but it has some good info including adding cdrom.sys to a pc boot disk and also some the names of the pdf files to look for at apples site.
http://docs.info.apple.com/article.html?artnum=50093 has some that may help
Apple has a good pdf called "pc_compatiblity_card" which covers all of the apple branded cards and weighs in at 16mb.
Win95 might run, I wouldn't bother with 98 as it will be very slow if you can install it at all.
