I don't see an option in mailman (2.1.12) for changing Sender:, so that's a "no" on adding this. List-Id: is the field to filter on to identify the list. Note RFC 5322 (3.6.2.) states the Sender: field is optional, only to be used if the submitting agent (Sender:) is different from the author (From:). I don't think the mailman counts as agent in this regard (though I'm not an e-mail expert).
