i just tried quartz composer and i was really impressed. now i want to know everything about it. :-)

That's a good start :) Knowing everything about it will take a while, but getting start isn't too difficult. I recommend lurking here, for one thing. You'll get to see lots of information pass by, you'll get to see things other people do with it, and you'll get to ask questions (but you already knew that part :)

what websites or references do you recommend for someone starting out? most of the sites i found look outdated or dead. i also looked for books but found none. i don't like short tutorials that much, i'd much prefer an all encompassing guide from start to finish. :-))

There's the classic "quartzcompositions.com" site, but I don't know if it's still actively maintained or not. I don't know of any other sites, unfortunately, so I can't offer much help there. We try to post stuff on our site, but it's mostly for developers. I recommend finding people who do interesting things with QC, and asking them lots of questions :)

i worked extensively in flash and dabbled in processing. my biggest gripe is that i know what i want and how to write it in code but i can't get my head around how to express it in boxes with wires (yet). i had the same problem with max/msp. maybe there is a more generic guide to this kind of software/environment in case there isn't one for quartz composer?
any help is greatly appreciated.

From what I've seen, it's quite similar to max/msp, but QC is simpler (there are advanced things you can do with Max that aren't currently done in QC, like spreads for example). There are some documents on developer.apple.com. This one: http://developer.apple.com/graphicsimaging/quartz/quartzcomposer.html covers the basics (it's aimed at Tiger, but I believe it still applies. I haven't read it in a long time). And then there's this one: http://developer.apple.com/documentation/GraphicsImaging/Conceptual/QuartzComposerUserGuide/qc_intro/chapter_1_section_1.html which goes more in depth.
