You could use Quartz Composer Visualizer which does a nice job of rendering each screen in a different thread and synchronising the different screens. This however causes problems if you use a Movie Loader since you can't handle a QuickTime movie in a different thread than it was initialised in. I had filed this as a bug (rdar://5673045) but got a response back recently which explained the solution clearly.

I suggest anyone that wants to do this also take a look at Troikatronix Isadora.

I did a test last year for a theatre production playing back quartz compositions split across four outputs on two graphics cards. The Isadora renderer seems to already be capable of running multi GPU's just drop them in and they play back ok.

Isadora also supports quartz compositions as effects chains with full parameter support and has a lot of very sophisticated support for DMX, serial inputs, multi channel audio etc. I'd suggest any doing theatre or multi screen display work with QC would probably save a lot of time if they consider using an Isadora + Qtz combo rather than rolling it all yourself.
