Yes I was confused about the Optical connectors on Macs and ADAT lightpipe for some time. Macs come with S/PDIF ports. Both protocols use TosLink connectors — hence the confusion. S/PDIF cannot transmit 8 channels and ADAT lightpipe can.

I'm kind of curious... how are you actually connecting an ADAT lightpipe out to an Apple computer? I've not known any Apple computers to actually have lightpipe inputs.

You may be connecting to what is a stereo digital input that has a similar connector, or are you converting to Firewire or USB? However, I generally avoided ADATs when they were popular, so take that with a grain of salt.

You might try going to http://kineme.net , then downloading and installing the "AudioTools" plugin. That has a patch that will also show all connected devices, and another patch that will output all channel data, and show you if you're actually getting 8 channels in or not.

Again, as far as I know, there should be a firewire or usb device that accepts lightpipe somewhere in the mix here.

I am trying to use the optical digital audio input as audio input into Quartz composer. However, I am struggling with getting Quartz to see the optical audio input as a source. Ideally, I would like for this to work with an Alesis Blackface ADAT. 8 discrete channels of audio. But I would be interested in any information regarding utilizing that input with quartz

First, what kind of input specifically are you looking for? As others have mentioned, the only real audio processing available in Quartz Composer is the Audio Input patch, which offers a peak volume and limited EQ. If you're looking for sample data, or multichannel input, you're likely to be disappointed.

On the Audio Input patch, press cmd-2 to get its settings panel -- you should be able to select various audio input devices there. Another useful tool may be Audio MIDI Setup -- it can help you identify what your optical input is presenting itself as (it may well be the Default Input device).
