Ok, this is the kind of functionality (more rules) I was talking about! When the countdown finishes it produces a pulse which flicks the multiplexer and swaps the start and stop signals back so it's stopped. So now, once it's finished you can reset it and start it again straight away.
Although now thinking about it ... maybe once it's finished, it needs to be reset before start / stop will work again! Over thinking much! Thanks to everyone that contributed.
