If you haven't discoered it already, simply click on the Qubes menu. In there should be an addiotional menu with a lot of computer control-panel like category settings. Find the one called Display, remove "Mirror" marker and then arrange the screens to your liking (Drag and drop the screens to make them fit), and then hit apply. Tip: Be mindful of the disvocering new screens feature. Under certain conditions it'll scramble your display layout and you have to re-do it again. In my personal experience I found it helpful to keep it off if you ever shutdown some of your screens between boots/restarts. I.e. if you use a KVM switch or similar.
