Luc, It is possible that (some of) these other sites have listed you as one of their peers (or servers) in their ntp.conf file.
You mentioned something about limiting what interfaces ntpd will listen to. Have you seen the -I option? In ntp-dev releases (most anything after 4.2.3) the --help flag to ntpd (or most every other command in the suite) will list the allowed options/flags along with their descriptions.
