OK, here's one of my creations. If you need more detailed measurements, please ask and I'll try. I really do "wing it" though!!
Pasta, tomatoes, and cheese
This recipe works just as well with chopped fresh tomatoes, 2 pints of halved fresh grape tomatoes, or 2 cans of the diced 28 oz size tomatoes. The quality of the tomatoes doesn't really matter.
tomatoes from one of the sources above
garlic cloves, smashed, to taste
1 box pasta (any shape will do)
1 or 2 ladels of pasta water
2 handfuls or so of shredded mozzarella cheese
salt & pepper to taste
Put pasta water in a pot to boil. Add a small amount of salt and a tad bit of oil to prevent sticking. Add pasta, cook to taste. In a saute pan on medium
heat (I use the electric skillet), saute garlic until fragrant (about 1 minute). Add tomatoes and stir thoroughly to combine flavors. Add 1 or 2 ladels of water from the pasta pot, depending on the consistency of sauce that you prefer. Simmer.
When pasta is done, drain and place in a large bowl. Ladel sauce mixture over pasta, stirring gently to coat all of the pasta. While stirring, add cheese to taste, a handful at a time.
Serve immediately. It's a complete meal within itself, or you could offer a salad and bread to complete the meal.
If you'd like, you could add canellini or great northern beans to the sauce once you turn it down to a simmer.
