For the last year I have been working on eating healthier and exploring new foods. The biggest set back I keep finding are recipes that make for a small army. I live alone, and while I like left overs, I don't like to eat anything for a week, and my freezor is screaming NO MORE! I can't eat bread or pasta so sandwiches and all the various pasta yummies are out.
I have become quite the cookbook wh*re in the past year, but sizing things down doesn't always work well, if my skills allow me to try that. So...I am looking for suggestions for websites, cookbooks, etc for good healthy recipes for cooking for one (Or even two for a days leftovers). I'll even take recipes if you have something tried and true that you would like to pass along. I appreciate any help I can get in this and so would my tummy!
