1 1/2 cups firmly packed fresh flat leaf parsley
1/2 cup loosely packed fresh rosemary leaves
6 medium garlic cloves -- chopped
1/2 cup olive oil
1/2 cup finely grated Parmesan cheese
1/4 teaspoon dried red pepper flakes
1/4 cup raw walnuts -- chopped
Wash parsley and rosemary, discard stems, and spin dry. In a food processor or
blender puree herbs, garlic, and 1/4 cup of the olive oil until thick and
homogenous. Add the Parmesan, red pepper flakes, and walnuts, and blend again.
With the machine running, add the remaining olive oil in a thin stream. A thick
rich paste will result.
Makes 1 cup (16 one-tablespoon servings)

"Rosemary is a strong-flavored herb that makes an exciting and unusual pesto. A
flat-leaf variety can be grown in home gardens. It is more fragrant and finer
in texture than the more common woody type. Either will work, but remember, a
little goes a long way. To create a sauce for 8-oz of noodles, whip 1/3 cup
pesto with about 1/4 cup half-and-half or light sour cream. Toss with hot pasta
and enjoy."
