I, too, use meat substitutes in a lot of casseroles that call for meat.
Cooking with meat substitutes once a week would be a good compromise
for your family -- who knows, they may really get used to it! :) My dad has
developed a taste for vegetarian (and not just meat substitutes) -- it's
good for his cholesterol! :) My mom has been amazed at some of her recipes I
duplicate, meatless.
Pasta is an easy thing to serve two kinds of -- one sauce with meat, the
other without. You can put extra veggies in both servings, or use meat
substitutes in all or part of it.
I'm single and live by myself (well, I can't really say that, I have pets --
and my chihuahua particularly likes to steal veggie hot dogs!) I halve
recipes, take leftovers to work (SOO much better than a sandwich or a frozen
meal!) and do a lot of freezing food, which I would do no matter what I'm
eating. Soups and chili freeze well, as do most casseroles. The only thing
that doesn't freeze well is my favorite baked macaroni and cheese. :( I'll
have to post that recipe, it makes a TON, so I usually cut it in half.
