Apple Brandy Sauce  
 
2 cups vegetable broth 
2 apples, peeled and diced 
2 green onions, chopped 
1 cup thick cream
1 tablespoon brandy 
salt and pepper 
 
Into a saucepan, mix together  broth, apple dices and chopped green onions. 
Simmer, over medium heat, for 30 minutes. Pour in cream; simmer for 15 minutes 
longer. 
Puree mixture into a food processor; stir in Brandy. Salt and pepper, to taste. 
Serves 4.
Pour over your favorite meal.
