PTL is a great tool, but you're able to use any templating system you want. Personally, I've used ZPT (Zope Page Templates) and Cheetah with great success. Quixote is still a great framework without PTL. I don't use Eclipse, but I would assume that Cheetah and ZPT would do just fine.

+1 on Evan's mention of Durus, or its older cousin, ZODB. Not every application suits persistent object storage, and every tool has its downsides; but it's a real treat to build models using Real Objects instead of rows or thin ORM wrappers.
