What about setting the aspect ratio? image(volcano, asp = 1)
Note that plotting functions (including image.SpatialGridDataFrame) will set the aspect ratio to 1, or if unprojected to a ratio based on the latitude of the data. See ?Spatial. Cheers, Mike.
