When doing this, I have turned on a graphics device prior to the plotting 
commands, for instance,

jpeg(file="somename.jpg")
plot....
dev.off()

I have also begun using TeXShop and Sweave implementations, which create 
good-looking PDFs instead of Word documents, but that is another story.
