Simon might correct me on this.
My belief is that any 64bit build on Mac OS X has been considered
experimental for a while and probably will in the foreseeable future.
One of the problems is that if the CRAN build supports x86_64, then
all binary packages (CRAN and Bioconductor) should be supporting it as
well.
Having said that, it is perfectly safe to use the builds you are
mentioning in your post. It does require setting up your system to
build (including installing a fortran compiler) and it does sometimes
break a bit (I think, sometimes the builds are failing), so you would
need to be a bit more forgiving. And you probably need to spend some
time keeping up to date on what happens (like subscribing to this list
and reading the FAQs etc).
