For anyone using Ubuntu, the Racket PPA has been updated for 7.3 too: https://launchpad.net/~plt/+archive/ubuntu/racket It's available on disco (19.04), cosmic (18.10), bionic (18.04), xenial (16.04), and trusty (14.04).
