If you don't care about redirecting, you could just do like Matt says,
but I'd be specific with:
<r:find url="/about/organization"><r:content /></r:find>
But I'd suggest you have something exist at /about-us
It's likely easier to link to (and remember) mysite.com/about-us
Often people (clients) forget that main pages have content; they see
the site tree and only imagine that the leaf nodes need content. To
solve this in the past, I've just generated my navigation with some
<r:if_url matches="/about-us"> and put in an extra link to
"Organization" which just links to "/about-us" and the Organization
content lives there.
I've found that its easier to understand a link that is a duplicate
("About" and "Organization" both go to "/about-us") than it is to see
an editable page (which actually redirects) and find that no editing
of content done there actually shows up anywhere.
You may also want to consider using the breadcrumb field for your
navigation or page title. You could create a navigation that says
"Organization" but is actually the "About Us" page (or something like
that).
