You can use the Input-Acct-Octets and Output-Acct-Octets attributes
in the accounting packets if your NAS supports them. Otherwise you
will need to snoop the network traffic with something like Netramet,
or if you are using Cisco equipment you can use Netflow accounting.
Be prepared however - this is an extremely difficult problem to deal with.
