There is copycat iPod setting that will play all tracks in an album when you select to play any one track. I think this is default behaviour (might be wrong). If you'd like your player to use the eminently more sensible "Play only the track I select" you'll have to find it in settings and enable it. And then make sure you have shuffle turned off.
