Alternatively, there are utility apps for managing your iTunes library - including features to export artwork. I found one via google - sorry don't have the name to hand. Then you can keep your artwork separate from the audio files or embed it using utilities such as mp3tag. Tons of info in the ripping/managing forum. Good luck.
