    this.set(this.select(function(className) {
      return className != classNameToRemove;
    }));
  },

to

remove: function(classNameToRemove) {
    if (!this.include(classNameToRemove)) return;
    this.set(this.select(function(className) {
      return className != classNameToRemove;
    }).join(' '));
  },

it seems to work as expected.
