When you press [F6] to add variables, you will notice that under the panel on the right there are two green arrows (up and down). Simply click on a variable and then use the key to move it up or down as needed. I personally seldom need to have the variables sorted alphabetically; I prefer to display them in the order in which they are calculated in the procedure so I can see them change in order. Having said that, it would be nice to be able to click on the header and sort it. You should submit it as a requested enhancements.
