There is probably a great deal of (applied psychological) research in this area, some of it harkening back to Frederick Taylor and his time-motion studies, some of it medical, some of it academic, some of it military, well, you get the picture. But when it comes to color and user interface design choices, I'm not so sure, although I suspect that there are references out there, maybe IBM, DOD, or ACM. I could suggest also a book called, "About Face", not the David Hackworth one, which, BTW is well worth reading, but the one by Alan Cooper, about user interface design.
