My personal observations are as follows.
Bear in mind that this is strictly in the category of
"beauty is in the eye of the beholder".

The more colours an app has the more garish it appears.
It's like every different colour is saying, "LOOK AT ME!"

The attraction tends to be towards the light rather than dark,
so I have:
1. a coloured border (usually dark, to direct the attention towards the centre)
    round my forms for module colour coding,
2. the default dark gray for the background to fields and text,
3. data entry fields black on white,
4. looked up values as black on light gray
    (to distinguish them from data entry fields)
5. _very_ sparing use of colour to highlight specific fields
    (probably not on one form in 20-50 out of nearly 800)
