Simplicity is the key to elegance.  We use white text on a dark blue 
background for most everything while the fields are black text on 
white.  We make very sparing use of other colors, none of them intense.

I've mentioned before a one-day course taught by Edward Tufte on the visual 
presentation of information.  He doesn't deal specifically with  interface 
design.  Rather, he approaches the subject from a much higher level and 
gets you to thinking about *all* of the visual aspects of your work.

He has self-published three books, "The Visual Display of Quantitative 
Information," "Envisioning Information," and "Visual Explanations:  Images 
and Quantities, Evidence and Narrative."  These books are great visual 
experiences in themselves, and are $40-$50 each, available from Graphics 
Press, PO Box 430, Cheshire, CT  06410.  I believe if you take his course 
the books are included.
