I can't speak for Rivendell's crank policy. But I can understand why a bicycle retail company, in general, might not want to offer a wide selection of cranksets. Cranksets are one of those items that have a lot of variables (q-factor, BB style and length, bolt pattern, chainring size, arm length, finish/color, etc) and elicit a lot of strong, conflicting, irreconcilable feelings among uber-enthusiasts. This means that some customers will be paralyzed by indecision, and will call and ask a hundred questions about 2-tooth differences in chainring size or 2.5 mm differences in arm length. It's sometimes better to say: "this is the one we carry, we know a lot about it, and it's plenty good."
In fact, that was a business practice I borrowed from Riv when we opened Hiawatha Cyclery. Keep it simple and don't provide too many choices.
