Bruce, Nice looking bike! I like the wheels, the silver sidewalls make them look good.
My Rambouillet also sports a pair of wheels built with Phil Wood hubs intended (and in this case used for) cyclocross. My moto is "if in doubt, make it stout" (works for beer too). Now that you have the best parts, it is your duty to extract every cent worth of useful life from them :-) I would go with chrome skewers too...matches the hubs.
