In the photo of the bike at Kezar, he mentions 2 complete systems of bar,
stem, cables, etc., so he just disconnects the cables, loosens the stem bolt
and changes out the entire assembly.  Pretty simple solution and will get
you away from messing with bar coverings, brakes, shifters, etc.  All for
the price of a second stem.  And you probably wouldn't use the same stem on
drops as you would on uprights anyway.
