You have an '83 850? That is a great bike. I would go with the Noodles - or maybe even a good flat bar like the Jitensha Nitto over Mustache. Personal preference only.
If you are thinking about a repaint, maybe you can hit Grant up for some Resurrecto decals. Trek does not seem to care about keeping their old decals in stock (of course there is always eBay).
