Hennepin County is mostly urban, but almost all great for cycling. The top spots to go would be Minnehaha Parkway (including Minnehaha Falls), the Minneapolis Chain of Lakes, Fort Snelling, Midtown Greenway and/or Cedar Lake Trail out to Hopkins (and beyond that to Lake Minnetonka), and along both sides of the Mississippi River. Those are all bike trails, but the streets are arranged in an easy grid and generally bike-friendly. Wherever you go, don't let the county line slow you down. The surrounding counties are good, too. The free maps are ok, but better maps are available at local bike shops for around $12. If you're around on the weekend, consider joining the Hiawatha Cyclery ride, every Saturday at 8 AM, 4301 E 54th St, Minneapolis. Easy, social pace, and good food/coffee stops.
