The Cinelli's anyway do not have as flat ramps as the Noodles.  Can't
quite tell from the photos but think it is the same with the Dreams.

As it happens, I have a fine old Cinelli handlebar.  If I decide to
hang the bike from the ceiling after I finish, then I will use it.

In any event, I am going to be using some French parts as well.
Definitely Simplex derailers.  I am going back and forth on the hubs.
I have a set of NOS Campy Gran Sports, Maxicars, and Pelissier 2000s.
The Gran Sports would be the classic match, but darn if the Maxicars
and Pelissiers don't look better.  And in the case of the Maxicars any
way, are probably far better quality.
