There's a pretty good Krebs map for the wine country area called 'North San Francisco Bay & Wine Country Bicycle Touring Map'. That would give you a really great start. For other places and routes, I would take a look at the Adventure cycling maps. The maps are pricey but I think you can download waypoints for their routes for free.
As far as transporting your bike, you can bring it on the plane with you (taken apart and packed in a bike box) for some extra cost depending on the airline, or you could ship it to an address via fedex or usps. Flying in to SFO, taking BART into the city, and then riding north from there could make for a great trip.
