Interesting idea, especially considering the abandoned cog is an 11 or 12. That's an idea worth looking into. OTOH, if the cassette is not the aforementioned oddball design (would Shimano do such a thing?) there's plenty of nicely spaced wide range 7 speeds with usable tooth counts. You've got choices.
