Usually, it's a very minor rearward shift in weight to keep the back tire
stuck. Combined with a reasonably smooth pedal stroke.  They used to talk
about "the pounce" posture for climbing the really off-road steep stuff.
With the long chainstays of the early mtb's, it was pretty easy to unweight
them when you stood, so the idea was you become kind of "cat-like" as you
come off the saddle.  This keeps your hips back just a bit and will tend to
weight down the rear wheel.

If you can make it work with smoother tires on steeper inclines, it'll feel
like you've got spikes when you add just a little tread. You may also find
that with rear panniers, that back tire stays pretty stuck.
