If you are on a 58 Saluki a 54 Hunq seems like the right size. The Top tube lengths are about the same, the standover is about the same. If you are someone with a longer torso, like me, I would get the larger bike. I rode a 58 Ram and even the 54 Huq seems a bit small for me with a 86.5 cm PBH. It also depends on if you will run drop bars or a bullmoose type bar. On the Bullmoose you need a longer top tube to make the fit more balanced.
I know others will disagree, but the bigger wheels make a lot more difference off road. They roll over obstacles much better and keep their momentum on downhills. I built up a nice lugged Stumpjumper with a custom fork a while back after having ridden 700c wheels off road for a long time. I couldn't wait to get back on the big wheels and sold off the Stumpy. Of course I'd get the Bombadil if money were not a huge deal.
