In light of the Blog post about this, I figured I would ask you leather users how you prevent the scratching from happening. Any convenient ideas?

You simply don't turn your bike upside down. "Pasadena style -- fuggedabout it."

I don't know about "racer style" -- if I'm doing it, "racer anything" doesn't enter into it -- but it's no big deal to remove a wheel without turning the bike upside down. As for an hour's worth of instruction sort of thing, I've been doing this for over 40 years, long enough to have gotten it to where I don't need Cliff Notes.
