The only one that I know of would be the Alex Singer shop in Levallois. They sell rando bikes and have a good supply of larger tires, bags, etc. Even if you don’t buy anything, it’s well worth the trip to see the location of one of the great French constructeurs.
Interestingly, the last time I looked for a bike shop in Paris I had a very hard time locating one—even asked for help from the concierge at the hotel. The closest I found was a large, Sports Authority-type shop that happened to sell some bikes.
