My Appaloosa fit well with the drops it came with. I swapped them out for Choco-Moose, which provides a nice sit-up position at the grips, plus I can slide forward to the curves to approximate the hoods position of drops.
I had the Bullmoose bars you're using and I don't think they're a good replacement for a flatbar that was already close enough. The Bullmoose has one effective grip position at the ends that you'll be in most of the time, which shortened your Bianchi considerably. Yes, you can grip near the V, too, but that position feels kinda awkward, like you're riding a really narrow flatbar. IMO the upright "3-speed bars" with fore-and-aft positions like Alba, Rosco and Choco work better for a flatbar bike with a reasonable tt length. I would only use that Bullmoose on a frame that started out too long for me.
