Not to over judge your plan BUT... If you are building this up to be a "cruiser-ish" ride that your partner can use on the weekends, I would not build your second bike to go "faster" if you plan to ride together. It sounds like you ride more than they do. I have found that you may be on the end of some bad feelings and reluctance to ride if the plan is to ride these bikes together. Only speaking from my experience but it's something to think about!
Another option is to think about the MAP/Ahearne bar. I have it on my Saluki and my wife's Betty Foy.
