05/10/19 I have a Quickbeam and a Rambouillet - both from 2006, both 60cm. On paper, they look like they should be extremely similar... but they don't feel that way to me. The only geometry difference is that the QB has 1/2 degree shallower head tube AND 2.5mm less fork rake, which I suppose - now that I actually analyze it for the the first time - gives the QB a fair bit more trail, especially combined with fatter tires. The QB also has less bb drop but that's to compensate for the sloped dropout so, with the wheel at the far rear position, it effectively yields the same net bb height.
I don't like single-speed, but I keep the QB with the intention of eventually making it geared, because it fits so damn well and rides so damn nice. (Maybe this will be the year...) I love both, but the QB has the edge in terms of comfort and ride quality - despite being stiffer. So if you want a QB-like bike with gears, my advice is to start with a QB. There have been many discussions and examples discussed here, for ways to add gearing - from IG hubs to 120mm cassette wheels with bolt-on derailleur hangers. Shy of that, perhaps a canti-rom? Or that yellow custom that someone recently outed for sale. It has canti brakes AND a semi-horizontal drop-out if I recall correctly...
