Ergon grips have become my first choice for any bar that will take them. Ergon makes a grip specifically for bars that sweep back, wavie bars and similar - I think it's the GC1 model - I've found it in both synthetic cork and standard rubber.
That said, I've found sweep angle to be important for my wrists - I either need a lot of sweep, nearly straight back, or not too much. I've used a Jones bar, with Ergon grips, and the grips improved the experience for me, but the sweep angle was still problematic and presented issues over long rides. I gave up on my first set of Jones bars, but recently brought them back into the picture when I bought a Jones bike - they've been working well this time around with a reduced stem length, bringing the swept portion of the bar closer to me.
