Well, all my bikes have fenders and I've found there is nothing more
annoying than a fender that rubs the tire when you go over bumps, etc.  I
always size them 10mm wider than the tire.  So a 43mm tire isn't going to
work very well with 45mm fenders unless the tires inflate to much smaller
than the stated width.

I'm having similar mental gymnastics, but not around fenders.  I'm thinking
about a crankset for my Platypus.  I guess you can't go wrong with the
Rivendell Silver, but I'm looking for a vintage triple I can put a bash
guard onto, maybe?
