For me, I would say when the width changes the bike's handling detrimentally. And, when increased width is accompanied by increased weight to the point where you're not happy with how the bike climbs, accelerates, and rolls. This is kind of how I evaluate any tire, though, not just the fat ones. Just my two itty bitty cents. Happy Friday, everyone!
