I'm roughly the same height and PBH as you (5'11", PBH = 87.5cm) and rode both bikes when I was there this summer. I thought they both felt good, but I subjectively liked the 54cm bike with moustache setup (other one had noodles) better. My intended purpose was for an all-road/mtb type bike, and the 54 was plenty big for that. The 58cm was good, but I was jaded by the long reach to the drops that this particular setup had. Not as much throw-aroun-ability, if you know what I mean.
Both bikes work for someone our size. If you have shorter arms or want more "clearance" for off-road use, get the 54cm. If you want a comfy road bike or tourer, and you are comfortable getting bars that work back more if necessary, get the 58cm.
