Eric: The mid-range sizes are really popular. If you are able to fit either side of 56, there have been a couple posted here recently; a 54.5 complete & a red 58 f&f. But if 56 is perfect, that's the way to go. It's not like you'll be replacing it any time soon.
When I got my Atlantis in '03, Riv said I could ride either 58 or 61.
