Some of the bikes are always "concept cars," that show off new ideas, like the Cherubim space ship. These builders are showing off for each other, too. They're putting their best ideas and most interesting prototypes front and center.
I don't think they're too nice. Bikes are made to be ridden. In Portland I regularly saw an Ahearne mixte locked up on the street that had been displayed at NAHBS. It may have won an award there. At bike events, which don't count as heavily, I've seen MAP bikes locked up outside that I'd seen as show bikes in previous years.
