Seth- Haven't used them personally, but Berthoud makes 700x60s in stainless steel (http://www.peterwhitecycles.com/fenders.asp). Note that the 700x50s I had several years ago were disappointing. The front fender wasn't any longer than Planet Bike plastics and required a huge mudflap.
